ToME is probably my favorite overall game, roguelike or not. I have just over 1000 hours through the Steam version and at least a couple hundred more outside of Steam. I have been playing the game on and off for years and somehow I keep coming back. My only real complaint is that a single run just takes so much time.

It's definitely possible to beat in a reasonable amount of time, depending on your strategy, and there are a lot of feasible strategies.
