My stops are usually Fort Smith, AR; Tucumcari/Santa Rosa, NM; and Williams, AZ. Any of the Love's truck stops are good but make sure you fill up on gas in Arizona before the last Holbrook exit. Once you get in CA it's desert for miles and few services. I think it was $3.95/gal earlier this week.

Very clean rest area on I-40 between Asheville and Knoxville. Easy to get in and out. It is apparently patrolled by police as there is a dedicated parking space for state troopers. It would be nice if it was a bit better lit but otherwise was as secure as any rest area I've seen. There are pet walking areas, vending machines and picnic tables.
